Job description

Role overview

This shipboard bakery role supports the day-to-day running of the Bakery Shop, with a strong focus on production flow, product quality, and presentation. The baker contributes to bread preparation for daily menus and buffet service while working within company procedures and food safety standards.

Key responsibilities

  • Keep bakery operations running efficiently and in line with company policies.
  • Prepare bread items for daily service, ensuring quality and presentation standards are met.
  • Support the Head Baker with production planning and with tracking leftovers to reduce waste and control food costs.
  • Help arrange bread displays for the various buffet areas.
  • Maintain thorough knowledge of United States Public Health rules and apply them consistently in daily work.
  • Clean the bakery area according to the Executive Chef’s schedule and use proper cleaning methods to avoid damage to equipment.
  • Ensure the bakery is prepared for scheduled or surprise USPH inspections by ship management or health inspectors.
  • Collect and move required supplies from the main stores to the bakery when assigned.
  • Follow company recipe standards and yield guidelines.
  • Assist the CDP Baker in preparing the daily consumption recap as requested by the Executive Chef.
  • Learn and apply shipboard operating procedures so guest and crew queries can be handled appropriately.
  • Take part in meetings, training sessions, courses, and other work-related activities as required.
  • Carry out additional related duties as assigned by supervisors or management.

Qualifications and experience

Candidates should have at least 3 years of experience working as a baker in an upscale hotel, resort, cruise ship, or convention banqueting environment; prior shipboard experience is preferred. A high school education or an equivalent basic education level is required. Knowledge of correct cleaning methods, sanitation requirements, and equipment handling is also expected.
