Role Overview and Responsibilities
- Uphold the LQA service standards required for the outlet.
- Review daily reports and hotel updates; promptly acknowledge VIP arrivals to provide tailored service.
- Arrive 10 minutes prior to shift; communicate early in case of delays.
- Know all food and beverage menu items in detail, including ingredients and preparation methods, and provide clear information to guests as needed.
- Offer children's menus appropriately and describe daily specials and alternative cuisine options.
- Serve and clear food and drinks professionally and discreetly, using trays and proper service ware.
- Operate the POS system for sales transactions, printing and closing checks, and completing cash-out procedures.
- Carry trays, bus tables, and reset tables with proper linen, chinaware, glassware, and silverware.
- Ensure guest satisfaction by proactively addressing issues and reporting resolutions to supervisors or managers.
- Follow cash and credit card handling procedures as per accounting guidelines.
- Maintain a clean and orderly restaurant environment throughout service.
- Perform polishing of cutlery and replenishment of condiments such as salt, pepper, sugar, and creamers.
- Prepare and operate coffee machines for specialty coffees and teas.
- Make and serve both alcoholic and non-alcoholic beverages.
- Keep the workstation stocked with necessary condiments at all times.
- Report guest feedback regarding food and beverage to the management.
- Handle and maintain operating equipment carefully.
- Adhere strictly to safety, sanitation, HACCP, and hygiene policies.
- Maintain positive relationships with colleagues and other departments.
- Have comprehensive knowledge of all food and beverage services, outlets, and hotel features.
- Perform opening and closing duties and set tables according to standards.
- Report deviations from standards or procedures to management immediately.
- Ensure service and storage areas remain safe and clean.
- Minimize waste, damage, and mishandling of supplies and equipment.
- Contribute to outlet cleaning and maintenance.
- Notify the Restaurant Supervisor/Manager at least 4 hours prior if unable to attend work due to illness.
- Support other food and beverage outlets during peak times or extended shifts as operational needs arise.
- Assist management in supervising operations to maintain service quality.
- Help conduct daily shift briefings and disseminate important information to restaurant staff.
- Assist in training colleagues, lead by example, and actively support team members during shifts.
- Learn and operate Raffles Dubai's operating systems as required.
- Conduct equipment and beverage inventories, ensuring accuracy and no discrepancies.
- Perform training duties and facilitate staff development as assigned.
- Use a hands-on leadership approach to nurture team building and staff growth.
- Work towards achieving outlet goals and management targets.
- Carry out any additional duties delegated by hotel management.
Qualifications and Additional Details
- Previous experience in food and beverage service is required.
- Demonstrated supervisory abilities with a practical and lead-by-example style.
- Passion for hospitality with a strong commitment to excellent guest service.
- Competent problem solver capable of finding creative solutions and offering support as needed.
- High personal integrity and ability to perform in a demanding, high-expectation environment.
- Familiarity with IT systems across various platforms.
- Effective communication skills are essential.
- Fluency in English; additional language skills are advantageous.
- Strong interpersonal and problem-solving skills.
