Commis Chef

Role overview

Mantra South Bank sits in Brisbane’s lively cultural and lifestyle district and features hotel rooms, studios, one-bedroom and two-bedroom apartments, along with a Mediterranean-style offering at OVELLO Bar & Kitchen. The surrounding South Bank precinct gives easy access to dining, parklands, Streets Beach, the Queensland Performing Arts Centre, Queensland Museum, and other attractions.

In this role, you will support the kitchen team as a Commis Chef, building your skills under the guidance of senior chefs. The position suits someone who genuinely enjoys cooking, brings creativity to the kitchen, and works well with others to produce memorable dishes.

Key duties

• Prepare and plate dishes so they meet property quality standards, are completed on time, and are presented to a high standard.
• Follow all health, safety, and regulatory requirements, including HACCP procedures.
• Maintain accuracy, consistency, and speed when producing food items.
• Learn continuously from senior chefs through coaching and hands-on support.
• Carry out a variety of kitchen work, ranging from dishwashing tasks to preparing finished dishes.

Skills and experience

• Recognised culinary education and relevant work experience.
• Commercial cookery qualification, with food handling certification or a food safety supervisor certificate preferred.
• Strong enthusiasm for food, natural talent, and a willingness to learn.
• Receptive to feedback and open to trying new approaches.
• Comfortable working in a busy, team-based kitchen environment.
• Clear and effective communication skills.
• Availability for rotating shifts, including mornings, late nights, weekends, and public holidays.
