Job Responsibilities
- Ensure outstanding food and beverage service by maintaining high standards in guest experience, accurate billing, ordering, and continuous guest satisfaction.
- Lead recruitment, training, development, and management of the restaurant team.
- Oversee operational controls including stock procurement, inventory oversight, care of equipment, and hygiene compliance.
- Maintain adherence to liquor licensing laws, hotel policies, and ensure the team is well-versed in menus, special dietary requirements, allergens, beverage options, and promotions.
- Manage financial and performance metrics such as stock audits, monthly financial reports, KPI monitoring, coordination of conferences and functions, and implement ongoing process improvements.
Required Qualifications
- At least five years of senior leadership experience, preferably within high-volume restaurants or five-star hotel environments; international experience is an advantage.
- Solid knowledge of food safety standards and regulations.
- Professional appearance with strong attention to detail, excellent organizational and administrative capabilities.
- Ability to remain calm and solution-oriented during high-pressure situations, including unforeseen disruptions like flight cancellations.
- Exemplifies hospitality and respect (manaakitanga) in all aspects of leadership and guest interaction.
- Expertise in alcohol service, wine varieties, and beverage pairings, with enthusiasm for sharing this knowledge.
- Possession of a valid Managers Certificate is required.
