Role Overview
The Cost Controller Supervisor plays a vital role in monitoring and managing the hotel's costs, ensuring precise inventory control, preventing wastage, and enhancing profitability through detailed cost analysis and reporting.
Core Responsibilities
- Oversee and analyze food, beverage, and operational expenses to maintain budget adherence.
- Generate and scrutinize cost reports on daily, weekly, and monthly bases to identify discrepancies and suggest corrective measures.
- Supervise inventory procedures including counts and reconciliation for food, beverage, supplies, and equipment.
- Investigate and resolve inventory irregularities such as shortages or excesses, ensuring proper stock rotation and inventory protocols.
- Authenticate purchase orders, receiving notes, and supplier invoices, ensuring all acquisitions are authorized and documented appropriately.
- Monitor supplier pricing structures and adherence to contracts, collaborating closely with purchasing and receiving teams to optimize costs.
- Prepare detailed reports on food and beverage costs as well as inventory variances, analyzing consumption patterns and waste levels.
- Support management with budget forecasting and monthly cost control reviews.
- Ensure compliance with corporate policies and maintain robust internal controls over inventory and purchasing processes.
- Participate in both internal and external audits, assisting with implementation of audit recommendations.
- Collaborate with kitchen, restaurant, stores, and purchasing departments to oversee recipe costing and menu profitability.
- Conduct surprise audits and spot checks to uphold inventory accuracy.
- Lead, train, and supervise the cost control team and inventory clerks, evaluating their performance and guiding improvements.
Qualifications & Experience
- Minimum of 3 to 5 years’ experience in cost control, inventory management, accounting, or finance.
- Preferred 1 to 2 years in a supervisory role.
- Background in hotel, hospitality, restaurant, or food and beverage sectors highly valued.
- Proven expertise in inventory audits, stock handling, and cost assessment.
Technical Skills
- Solid grasp of cost accounting principles and inventory control techniques.
- Understanding of food and beverage cost management practices.
- Knowledgeable in purchasing, receiving, and store operations.
- Familiarity with budgeting, financial reporting, and internal controls compliance.
Computer Proficiency
- Advanced skills in Microsoft Excel, including pivot tables and report generation.
- Experience using ERP systems, accounting software, and inventory management platforms.
- Competent in analyzing and compiling cost control reports.
Leadership & Analytical Skills
- Capable of managing and mentoring staff involved in cost control functions.
- Strong organizational, planning, and multitasking abilities to meet deadlines.
- Detail-oriented with excellent numerical and analytical capabilities.
- Adept at identifying cost deviations and recommending practical solutions.
Communication and Interpersonal Skills
- Effective verbal and written communication abilities.
- Skilled in preparing clear and comprehensive reports and presentations.
- Excellent interpersonal skills to liaise across various departments.
